Ingredients
- 2 cans (14.5 oz each) Muir Glen organic diced tomatoes with Italian herbs, undrained
- 4 medium red potatoes, cut into 1/2" pieces
- 4 medium celery stalks, cut into 1/2" pieces (2 cups)
- 3 medium carrots, cut into 1/2" pieces (1 1/2 cups)
- 2 medium parsnips, peeled, & cut into 1/2" pieces
- 2 medium leeks, cut into 1/2" pieces
- 1 can (14 oz) or 1 3/4 cups vegetable or chicken broth
- 1/2 tsp salt
- 1/2 tsp dried thyme leaves
- 1/2 tsp dried rosemary leaves
- 3 Tbsp cornstarch
- 3 Tbsp cold water

Step 1
1) In 4 or 5-qt slow cooker, place all ingredients except cornstarch & water.
2) Cover, cook on LOW 8-10 hours or until vegetables are tender.
3) Mix cornstarch & water. Gradually stir into stew until blended.
4) Increase heat setting to HIGH; cover & cook about 20 more minutes, stirring occasionally until thickened.
