Ingredients

  • 1 store-bought rotisserie chicken (or 2 large chicken breasts baked & shredded)
  • 1/4 cup hot sauce (recommended: Frank’s Red Hot Buffalo Sauce)
  • 3 1/2 oz. cream cheese, softened
  • 1 3/4 cups sharp cheddar cheese, shredded
  • 1/4 cup freshly sliced green onions, plus additional for garnish
  • 1 cup all-purpose flour
  • 3 eggs, lightly beaten
  • 2 cups bread crumbs

Step 1

Preheat oven to 350 degrees. Cover a baking sheet with parchment paper & set aside.

Remove the breast meat from the rotisserie chicken & shred into pieces, discarding the skin. Place shredded chicken in a medium sized bowl. Add in hot sauce, cream cheese, cheddar cheese, & green onions. Mix thoroughly. Using a small cookie scoop, scoop out the chicken mixture & roll into balls & place on a large plate to await the dipping process.

Place flour, egg & bread crumbs in three separate bowls for dipping. Start with just 1/3 cup flour, 1/2 cup bread crumbs & 1 egg and then add more as needed. Take each buffalo chicken ball & roll it in the flour, then the egg and finally the bread crumbs, coating liberally. Place on prepared baking sheet.

Bake for 20-25 minutes until golden brown. Remove from oven & serve hot with desired dipping sauce.
