Ingredients
- 2 cups HILL COUNTRY FARE ALL-PURPOSEMIX
- 1 LEMON, grated and juiced
- 1 1/4 cups H-E-B MILK, 2%, low fat or fat free
- 1/4 cup or 1EGG HILL COUNTRY FARE REAL EGG
- 2 Tablespoons H-E-B EXTRA LIGHT OLIVE OIL
- NON-STICK COOKING SPRAY
- 1 cup H-E-B FROZEN BLUEBERRIES
- BUTTER
- SYRUP

Preparation
Step 1
1. Heat waffle iron according to manufacturer's directions.
2. Combine the all purpose mix, grated lemon and juice, milk, egg and olive oil in a bowl.
3. Stir batter with a spoon until moistened. Lightly coat waffle iron with non-stick spray. Pour 1/4 cup batter (or manufacturer's recommended amount) into the center of the hot, sprayed waffle iron and sprinkle 6 to 8 blueberries over the waffle. Follow waffle iron manufacturer's directions for best results.
4. Remove waffles carefully and serve with butter and syrup.
