Ingredients

  • 1/3 cup softened butter
  • 1 cup granulated sugar
  • 2 eggs
  • 1/3 cup water
  • 1/4 tsp almond extract
  • 1 cup peeled, chopped peach
  • 1 2/3 cups flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 Tbsp chopped walnuts
  • 2 Tbsp brown sugar

Preparation

Step 1

Preheat oven to 350°F.

In a large bowl, cream butter and sugar for 1 minute. Beat in eggs, water, and almond extract. Stir in peach.

Sift flour with baking soda, salt, baking powder, cinnamon and nutmeg. Beat into batter.

Pour into 2 (12-cup) muffin tins. Top with walnuts and brown sugar. Bake for 18 minutes or until muffin tops spring back when touched.

Cool on a wire rack.
