  • 1 lb. boneless, skinless chicken, sliced thin
  • 2 TBSP & 2 tsp. flour
  • 2 tsp butter
  • 2 tsp. olive oil
  • 1 cup orange juice
  • 1/2 cup of Marsala wine
  • 2-3 TBSP fresh parsley
  • 1 package sliced mushrooms

Directions
Heat a deep nonstick skillet over medium high heat. Dredge chicken in flour. Add a tablespoon of extra-virgin olive oil and place the chicken to the pan. Season chicken with salt and pepper. Brown chicken until lightly golden all over, about 5 to 6 minutes. Remove chicken from pan and put in baking dish. Add the rest of the ingredients to baking pan. Cover and bake about 30-40 minutes.
