A great quiche recipe that I found in a Diane Mott Davidson book. I have tweeked it some so it is Weight Watchers friendly at 7PPV per slice.

Ingredients

  • 7 slices reduced-fat cooked crisp bacon OR turkey bacon
  • 6 oz. Gruyere cheese
  • 3/4 cup Egg Beaters
  • 3/4 cup Half-n-Half cream
  • 1/4 cup skim milk
  • 1 tsp. dehydrated onion flakes (or 1 small onion
  • chopped)
  • 1/2 green pepper, chopped (optional)
  • Salt and Pepper to taste
  • 1 deep dish pie shell

Preparation

Step 1

Preheat oven to 350F.

Cook bacon until crisp. Drain thoroughly and pat with paper towels. Cut each slice of bacon into 4 equal pieces. Evenly distribute the bacon then the cheese over the pastry crust. Set aside.

In large mixing bowl, add the Egg Beaters. Beat in the cream and milk. Stir in onion flakes, peppers, and salt and pepper until combined. Pour over bacon and cheese and carefully sit in the preheated oven.

Bake for 30 to 40 minutes or until the quiche has puffed and browned slightly and is set in the middle. Check with a spoon to make sure there is no uncooked liquid in the center of the quiche.

Serve immediately.
