Ingredients

  • 1 1/2 cups dry lentils, rinsed
  • 1 cup dry red lentils, rinsed
  • 5 cups water
  • 1 packet (1 1/2 ounces) dry onion soup mix
  • 1 (14 1/2 ounce) can diced tomatoes
  • 2 cloves garlic, minced
  • 1 medium onion, diced
  • 1 tbsp chili powder
  • 1/2 tsp cumin
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Hot red pepper sauce, optional
  • Cheddar or Monterey Jack cheese, optional
  • Guacamole for garnish, optional
  • Cilantro for garnish, optional

Preparation

Step 1

In a large saucepan, bring lentils and water to a boil. Add dry onion soup mix. Reduce heat, cover and simmer 30 minutes, or until lentils are tender. Add tomatoes, garlic, onion, chili powder and cumin and simmer 30 minutes longer. Season with salt, pepper and hot red pepper sauce, to taste. Garnish as desired.
