Ingredients

  • 2 1/2 cups cooked pinto beans (kidney beans, chickpeas and baby limas should also work well)
  • 2 eggs, beaten
  • 1 large onion, minced
  • 1 carrot, grated
  • 1 1/2 tsp salt, optional
  • 1 cup whole wheat flour
  • Oil for frying

Preparation

Step 1

Mash beans well with beaten eggs, veggies and salt. If hot, stir until cool enough to handle. Add flour a little at a time and mix thoroughly. Form into patties about 3" in diameter and 1/2" thick - they'll be rather sticky. Fry in 1/4" or so of hot oil for 2 to 3 minutes on each side; drain before serving. Good with a little soy sauce, ketchup or tomato sauce.
