Ingredients
- 1 c. whole wheat breadcrumbs
- 1/2 c. flaxseed meal
- 1/2 c. sweet potato puree
- 1/4 c. pineapple puree
- 1 Tbl. soy sauce
- 1 egg white
- 1/4 c. shredded unsweetened coconut
- 1 lb. boneless chicken breast fingers
- 1/4 tsp. salt
- 2 Tbl. flour
- olive oil

Preparation
Step 1
Mix together the breadcrumbs and flaxseed meal.
Combine the purees, soy sauce, egg white and coconut.
Mix together the flour and salt.
Dredge the chicken in the flour, then dip into the egg white/puree mixture, then roll in the breadcrumb mixture.
Brown in olive oil, turning when brown. Cook until done.
