  • 1 bag fresh spinach, washed and rinsed well
  • 3 tbsp heavy cream or sour cream
  • pinch of grated nutmeg
  • 2 eggs
  • 1/3 cup grated N.Y.sharp cheddar cheese

Preparation

Step 1

Steam the spinach for a few minutes until tender. Leave to drain, then squeeze out any excess water using your hands. Finely chop the spinach, then mix with the cream and nutmeg in a small pan and cook until heated through. Spoon the spinach into a small ovenproof dish.
Make two holes in the spinach mixture, large enough to accommodate the eggs. Break the eggs into the holes, top with the grated cheese, and broil for 2-3 minues until the eggs have set.
