  • For broth:
  • 1 fryer (or use 6 thighs or 3 breasts)
  • 4-1/2 cups water
  • 1 onion, quartered
  • 1 bay leaf
  • Parsley
  • For soup:
  • 2 cans (1 # each) tomatoes
  • 1 potato, diced
  • 1 onion, diced
  • 1 green pepper, diced
  • 3 carrots, diced
  • 1/2 cup uncooked rice (not Minute Rice)
  • 1 Tbls. salt
  • 1/2 teas. Pepper
  • 2 – 3 chicken bouillon cubes
