Ingredients
- For broth:
- 1 fryer (or use 6 thighs or 3 breasts)
- 4-1/2 cups water
- 1 onion, quartered
- 1 bay leaf
- Parsley
- For soup:
- 2 cans (1 # each) tomatoes
- 1 potato, diced
- 1 onion, diced
- 1 green pepper, diced
- 3 carrots, diced
- 1/2 cup uncooked rice (not Minute Rice)
- 1 Tbls. salt
- 1/2 teas. Pepper
- 2 – 3 chicken bouillon cubes
