Ingredients

  • 2 Tbsp chopped fresh or 2 tsp dried rosemary leaves, crumbled
  • 4 cloves garlic, finely chopped
  • 3-3 1/2 lb pork loin center roast (bone-in)
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 Tbsp butter or margarine
  • 1 small onion, chopped (1/4 cup)
  • 2 Tbsp olive oil

Preparation

Step 1

1) Heat oven to 325.
2) Mix rosemary & garlic in small bowl.
3) Make 8-10 deep cuts about 2" apart in all sides of pork with sharp knife.
4) Place small amount of rosemary mixture in each cut.
5) Sprinkle pork with salt & pepper.
6) Melt butter in shallow roasting pan in oven. Sprinkle with onion.
7) Place pork in pan; drizzle with oil.
8) Insert meat thermometer so tip is in center of thickest part of pork and does not rest in fat.
9) Roast uncovered about 1 hour 15 minutes, or until thermometer read 155.
10) Remove from oven; cover with tent of aluminum foil and let stand 15-20 minutes or until temperature rises to 160 (medium).
