Ingredients
- 3.5 oz roasted red peppers
- 1/4 cup feta cheese
- 1 Tbsp red wine vinegar
- 1 cup marinated artichoke hearts
- 12 thin lemon slices
- 2 whole wheat pizza dough ball
- 1/2 cup fresh baby spinach
- 8 quartered Kalamata olives
- olive oil
- ground pepper

Step 1
Rinse and drain red peppers and puree in blender with feta cheese and red wine vinegar. Rinse and drain and halve artichoke hearts. Grill artichokes and thinly sliced lemons, turning until marked, 2 minutes. Remove from heat.
Unwrap 2 whole wheat pizza dough balls and lightly coat each with olive oil spray. Grill until golden brown, 2 minutes. Flip and apread evenly with red pepper sauce. Sprinkle evenly with spinach and olives. Scatter artichokes and lemon slices over top and grill. Drizzle with olive oil and pepper.
