Ingredients

  • Corn puff:
  • 2 10-ounce packages frozen chopped broccoli
  • 1 cup Bisquick
  • 1 cup milk
  • 2 eggs
  • 1/2 teaspoon salt
  • 4 ounces shredded cheddar
  • substitute 2 packages frozen corn
  • Spinach puff:
  • substitute 2 packages frozen chopped spinach

Preparation

Step 1

Heat oven to 325 degrees. Butter 5 1/2-cup souffle dish or 1 1/2 quart casserole. Cook broccoli as directed on package; drain.

Beat baking mix, milk, eggs and salt with hand beater until smooth.

Stir in broccoli and cheese. Pour into souffle dish. Bake until knife inserted halfway between center and edge comes out clean, about 1 hour. Serve immediately.
