Queso Fundido

Ingredients
- 1/2 lb. sausage
- 1 medium onion (finely diced)
- 2 small peppers (any color diced finely)
- 1 lb. Monterey Jack cheese (grated)
- Sprinkle of Chili powder
- 3 Roma tomatoes (diced)
- 1/4 c cilantro (chopped)
- Tortilla chips for serving

Step 1
Preheat oven to 400 degrees. In large skillet cook and crumble sausage until brown. Remove and drain grease. Add peppers and onion to skillet and cook until soft and brown. remove from heat and set aside.
To build the skillet, place 1/3 of the cheese in a medium oven proof skillet. Add half the sausage. Add another third of cheese, then as much of veggie mixture as you like. Add almost all of the remaining cheese, rest of sausage then whatever is left over. Sprinkle top with chili powder.
Depending on skillet size, just build until to the top of skillet.
Place in oven and start watching at 4-5 minutes. You want to bake until the cheese is totally melted, hot and slightly bubbly but before cheese starts to firm up. (cheese needs to be gooey)
Remove from the oven and top with diced tomatoes and serve immediately with tortilla chips.
NOTE:
Is best when it is hot.
Remember to wrap skillet handle with towel so you don't get burned.
