Spanish Rice (Microwave)


This is one of the first recipes I tried when I purchased my first micro wave from the $ donated at our Stag and Doe. Mark bought golf clubs! (1986)

  • 1 Large Onion
  • 1/4 Cup finely chopped green pepper
  • 2 tbsp. butter/margarine
  • 1 can (16 oz) stewed tomatoes, chopped and drained (reserve liquid)
  • 1 Cup long grain rice
  • 1-1/2 Tsp. salt
  • 1/8 tsp. pepper

Preparation time 10mins
Cooking time 35mins


Step 1

In 2 quart casserole, combine onion, green pepper and butter.

Cook at high 2-1/2 to 3-1/2 minutes; stir once.

Add enough water to reserved liquid to equal 2 cups.

Add to dish with tomatoes, rice ,salt and peppers.

Cook covered with lid at high 4 to 5 minutes and then at medium low for 16 to 17 minutes.

Let stand covered 5 minutes.
