Zucchini Bread

Found in Mom's recipe collection. I made this September 2011 and it was a really good recipe for zucchini bread!

Ingredients

• 3 beaten eggs
• 2 cups sugar
• 1 cup oil
• 1 teaspoon vanilla
• 2 cups grated squash
• 3 cups flour
• 1 teaspoon salt
• 1 teaspoon soda
• 1 tablespoon cinnamon
• 1/4 teaspoon baking powder
• 1/2 cup nuts or raisins

Preparation

Step 1

Mix together eggs, sugar, oil, vanilla and squash.

Blend in flour, salt, soda, cinnamon, baking powder and nuts or raisins.

Pour into 2 greased loaf pans. Bake at 325 degrees for 1 hour.
