OVEN-BAKED "SOUTHERN FRIED" CHICKEN

By

Crisp and crunchy-perfect chicken every time, thanks to an inexpensive easy-do "convenience mix" you make yourself and keep in the pantry to use as needed. I refrigerate or freeze my mixture.

Preparation

Step 1

1. Measure out 1/2 Cup of "Skinny Shake" mix and put it in a heavy paper bag. Moisten the pieces of chicken with water and shake them up in the bag, a few pieces at a time.

2. Arrange chicken, skin side up, in a single layer on a non-stick baking pan and bake in a moderateoven (375 deg) about 45 minutes, adding absolutely no other fats or oils. Don't be alarmed if the chicken seems dry for the first 20 minutes; then the "Skinny Shake" starts to work, and at the end of he baking period, it will be crisp and perfect.
