  • 4 Tbsp olive oil
  • 1.2 lb assorted fresh mushrooms
  • 4 thin leeks, white and pale green parts sliced
  • 2 lb cauliflower cut into florets
  • 1/4 cup Parmesan cheese

Preparation

Step 1

Heat 2 Tbsp olive oil over medium heat and add mushrooms until golden brown, about8 minutes. Transfer to bowl. Add 1 Tbsp of oil and cook leeks, stirring about 2 minutes. Stir in cauliflower and 5 cups water. Simmer 20 minutes. Puree in blender in batches until smooth. Return to soup pot with mushrooms and Parmesan cheese. Season to taste and add salt and pepper to taste. Drizzle with olive oil
