Spritz Cookies--Mom's

Mom's recipe for "press" cookies. I tested these November 2011 and they turned out pretty good. They were light and crisp like shortbread cookies. Sometimes it would like several tries before the shapes started coming out of the press right, but they tasted good even when they didn't look right. I did leave out the baking powder so they would hold the shape better. They were crisper than the ones Mom made, so I wonder if she used margarine instead of shortening.

Ingredients

  • 2 cups shortening
  • 1 1/2 cups sugar
  • 2 eggs
  • 4 1/2 cups flour
  • 1/2 teaspoon baking powder (this item was struck through on Mom's recipe card)
  • 2 dashes of salt
  • 2 teaspoons almond extract

Preparation

Step 1

Cream shortening and sugar until fluffy. Add eggs and almond extract and beat until incorporated. On low speed, add flour and salt and mix until incorporated. Place portions in cookie press. Bake at 375 degrees for 10 to 12 minutes.
