  • 1 lb. farfalle
  • 2 small zucchini
  • 2 tbs. olive oil
  • 1 clove garlic, minced
  • 3 plum tomatoes, diced

  • 1 tbs. chopped basil
  • Ground pepper

Preparation

Step 1

Bring a pot of salted water to a boil. Cook pasta until al dente.

Using a mandolin thinly slice the zucchini. In a skillet over medium heat warm the oi. Add the zucchini and garlic, and saute until the zucchini is tender, about 4 - 6 minutes. Drai the pasta and add it to the skillet. Add the tomatoes and basil. Season wit the salt and pepper and toss and serve.
