  • 8 cups sliced squash
  • 2 cups sliced onions
  • 1 tbsp pickling salt
  • 1 cup diced green pepper
  • 2 cups cider vinegar
  • 3 1/2 cups sugar
  • 1 tsp celery seed
  • 1 tsp mustard seed

Preparation

Step 1

Combine squash & onions, sprinkle with salt & let stand 1 hour.
Combine green pepper, vinegar, sugar, celery & mustard seed, bring to a boil, pack squash & onion into hot jars, pour liquid over & seal jars.
