Ingredients
- 1 garlic clove, minced
- 2 tbsp. white onion, finely chopped
- 1/4 cup white balsamic vinegar
- 2 tsp. fresh dill, finely chopped
- 2 tsp. fresh flat-leaf parsley, finely chopped
- 2 tsp. fresh chives, finely chopped
- 1/4 tsp. black pepper, freshly ground
- 1 Medjool date, pitted (or 1 tbsp. date paste)
- 1/2 tsp. mustard powder

Step 1
1. Boil water and place pitted date into small bowl. Cover with boiled water and let sit about 10 min. to soften date.
2. Meanwhile, mix together remaining ingredients in another bowl.
3. Pour out almost all of the date water, leaving only about 1/2 tbsp. Mush date using a fork until paste-like. Add date in with remaining ingredients, mix and let rest about 10 min. so the flavours can come together. (Add more ingredients to taste, if desired). Toss and serve over a salad of mixed greens, sweet red bell pepper, tomatoes and chick peas.
