  • 1 1/2 cups flour
  • 1 cup granulated sugar
  • 1/3 cup unsweetened cocoa
  • 1 Tbsp instant espresso powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup canola oil
  • 2 Tbsp cider vinegar
  • 1 1/2 tsp vanilla
  • 1/2 cup low-fat sour cream
  • 1/2 cup water
  • 1 Tbsp confectioner's sugar

Step 1

Preheat oven to 350 degree. Spray 8-inch square baking pan with nonstick spray.
Whisk flour, granulated sugar, cocoa, espresso powder, baking soda and salt in bowl. With spoon make a 4 inch well in center and add oil, vinegar and vanilla. Whisk sour cream and water in small bowl, pour over entire mixture. Stir well until smooth. Bake until toothpick inserted in center of cake comes out clean, about 25-30 minutes. Cool in pan for 10 minutes. Serve warm sprinkled with confectioner's sugar.

To decrease calorie count, substitute granulated sugar-blend sugar for regular sugar.
