Teriyaki Mushrooms & Chicken

Ingredients

  • 8 oz. baby bella mushrooms, sliced
  • 1/4 C. onion, diced (or fennel)
  • 2 T. butter
  • 1/4 C. soy sauce
  • 1 T. red wine vinegar
  • 1 T. brown sugar
  • 1 1/2 t. ginger
  • 1 1/2 t. garlic, minced
  • 2 T. tapioca
  • 2 boneless, skinless chicken breasts

Preparation

Step 1

Place chicken in a baking dish. Bake at 350 degrees for 40 minutes.
Meanwhile, in a large skillet, melt butter. Add mushrooms and onion. Cook until mushrooms are tender. Add soy sauce, vinegar, sugar, ginger and garlic. Stir and cook until warm. Add tapioca and cook until sauce thickens. Add chicken. Serve.
