Ingredients

  • 3 c all-purpose flour
  • 1/2 tsp salt
  • 1 cup (2 sticks) butter, softened
  • 1 c sugar
  • 1 large egg
  • 1 tsp vanilla
  • 1 tsp lemon extract

Step 1

Using mixer with paddle attachment, cream together the butter and sugar until light and fluffy. Add the egg, vanilla, and lemon extract and mix until well blended.

With the mixer on low, gradually add the flour and salt to the butter mixture until thoroughly blended.

If you're making the dough ahead to chill or freeze...
Turn out the dough onto work surface and divide it into two equal portions. Form each one into a rough disk and wrap in plastic wrap.

Roll dough in between two pieces of parchment paper. Bake on parchment for 12-16 mn (about 13 mn.) or until cookies start to turn slightly golden around the edges.

Slide parchment paper onto wire rack to cool.
