Ingredients

  • 1/3 large sweet potato cut into cubes
  • 1/4 cup chopped onion
  • 2 tsp olive oil
  • 1/4 tsp chili powder
  • 1/4 tsp cumin
  • 1/4 tsp dried oregano
  • 1/8 tsp salt
  • 2/3 cup cooked lentils
  • 1/4 cup low-sodium chicken broth
  • 8-inch whole-wheat tortilla
  • 1 tbsp nonfat plain Greek yogurt
  • 1/2 cup shredded lettuce
  • 1/4 cup halved grape tomatoes
  • 2 tbsp salsa

Preparation

Step 1

In a medium skillet, sauté sweet potato and onion in olive oil until potato is soft, 7 minutes. Add chili powder, cumin and dried oregano and salt; stir. Add cooked lentils, low-sodium chicken broth; cook 5 minutes. In center of a whole-wheat tortilla, place nonfat plain Greek yogurt, sweet potato mixture, shredded lettuce, halved grape tomatoes; roll up. Serve with salsa.
