Ingredients

  • 1 pound semisweet chocolate chips
  • 1 stick unsalted butter + 2 T butter
  • 4 eggs
  • 1 T sugar
  • 1 T flour

Preparation

Step 1

Preheat oven to 425 degrees F.
In double boiler or microwave, melt chocolate and butter just until melted.

In double boiler, over simmering water, beat eggs and sugar together until dissolved and mixture is lukewarm. Do Not Overcook!

Remove from heat and beat until mixture quadruples in volume.

Fold flour into eggs.
Stir 1/4 of egg mixture into melted chocolate, then fold chocolate into remaining egg mixture.

Taking an 8" round cake pan, cut circle of wax paper. Butter bottom and sides and place wax paper on bottom of pan. Dust inside evenly with flour.

Bake in a preheated oven for 15 minutes. Cake will be liquid in the center. Freeze overnite before removing from pan. Dip pan in hot water to loosen mold.
