Ingredients

  • 2 pounds pork, cut into good-size pieces
  • juice of 3 medium oranges
  • 2-3 bay leaves
  • 2 cloves of garlic
  • 1 teaspoon paprika
  • salt, black pepper
  • 1/4 teaspoon Portuguese allspice
  • 1 teaspoon ground red pepper sauce
  • 1 tablespoon lard or vegetable oil
  • 1/4 cup white wine

Step 1

Rinse pork under cold water, put in a bowl. Add orange juice,wine,garlic,oil and spices; mix. Cover and marinate overnight in the refrigerator. Put meat and marinade in cooking pan and simmer over medium heat until tender, about 1 1/2 hours. Add warm water as needed. Season to taste.
