Ingredients

  • 1 quart peeled and diced cooked potaoes(about 2 lbs)
  • 1 medium onion,chopped fine (1/2 cup)
  • 1/2 cup diced celery
  • 1/2 cup diced cucumber
  • 1/2 cup finely sliced radishes
  • 1 tablespoon chopped chives
  • 4 hard cooked eggs,diced
  • 1 cup sour cream
  • 1/4 cup mayonnaise
  • 1/2 teaspoon salt
  • 1/8 teaspoon fresh ground pepper
  • dash each of garlic salt and cayenne
  • 2 tablespoon vinegar
  • 1/2 teaspoon hot prepared mustard

Preparation

Step 1

Combine potaoes,onion,celery,cucuber,radishes and olives.Dice whites of 3 eggs and add to vegetables.In bowl mash 3 egg yolks with fork,stir in sour cream,maytonnaise,salt, pepper,garlic salt,cayenne,vinegar and mustard.Add to vegetables and mix well.Garnish with remaining egg slices.Chill several hours.
