Amaretti Sandwich Cookies

Ingredients
- 1 7 oz tube almond paste
- 1 c sugar
- 2 egg whites, room temp for 30 mins.
- Nutella for filling

Step 1
Heat oven to 300 degrees. Line cookie sheets w/parchment paper.
Mix almond paste, sugar and egg whites.
Use pastry bag or drop a 1/4 tsp of dough onto cookie sheet for each cookie.
Bake 15 mins, until cookies are golden and puffed.
Let cookies cool on the sheet then place on wire racks to cool completely.
Turn one cookie over so flat side is facing up. Place some Nutella on the cookie. Top with another cookie, flat side facing spread to create a sandwich. Repeat until all cookies are used.
