Ingredients
- 1 c orzo
- 2 1/2 c water
- 2 tbsp olive oil
- 1 tsp dried mint
- 1 tsp salt
- 1/2 tsp paprika
- 2 lemons, zested, 1 juiced
- 2 scallions, chopped

Step 1
Cook orzo in a small saucepan with water, olive oil, mint, salt, pepper and lemon zest, 10-12 mins. Let cool slightly. Stir in scallions, lemon juice and salt to taste.
