Chicken Kabobs with Peanut Sauce

Ingredients
- 1 lb chicken breast or tenders, cut into 3/4-inch pieces
- 1/4 cup soy sauce
- 1 Tbsp vegetable oil
- 1 tsp packed brown sugar
- 1/4 tsp ground ginger
- 1 clove garlic, minced
- 1 Tbsp vegetable oil
- 1/4 cup onion, finely chopped
- 1/3 cup peanut butter
- 1/3 cup water
- 1 Tbsp lemon juice
- 1/4 tsp groun corriander
- 4 drops red pepper sauce

Step 1
1) In large glass bowl, mix chicken, soy sauce, 1 Tbsp vegetable oil, brown sugar, ground ginger & garlic. Cover & refrigerate at least 2 hours.
2) Soak 14-16 bamboo skewers at least 30 minutes to prevent burning.
3) In 2-qt saucepan, heat oil over medium heat. Cook onion until tender.
4) Remove pan from heat; Stir in 1 Tbsp vegetable oil, peanut butter, water, lemon juice, corriander & red pepper sauce. Heat over low until blended.
5) Set oven to broil. Remove chicken from marinade & thread chicken on skewers.
6) Broil 4" from heat for 5 minutes.
7) Turn chicken; broil for another 5 minutes.
8) Serve with peanut sauce.
