Ingredients

  • 1/3 cup orange marmalade
  • 1 Tbsp. butter, melted
  • 1/4 tea. cinnamon
  • 1/4 t5ea. ground ginger
  • 1 Tbsp. dried cranberries
  • 1 medium sweet potato, peeled, cut into 1/2" slices
  • 1/4 cup Bisquick mix
  • 1/78 tea. cayenne
  • 2 Boneless pork loin chips, 1/2 " thick (1/2 lb)
  • 1 Tbsp. soy sauce
  • 1 tea. vegetable oil

Step 1

Heat oven to 350 degrees. In small bowl, mix marmalade, butter, cinnamon and ginger. Stir in cranberries and sweet potato. In ungreased 8" square baking dish, spoon potato mixture diagonally. Bake 10 minutes.

meanwhile, in medium bowl, stir Bisquick mix and cayenne. Dip pork into soy sauce, then coat with Bisquick mixture. In 10" skillet, heat oil over medium-high heat. Add pork, cook 5-7 minutes, turning once, until coating is brown.

Place 1 pork chop on each side of potato mixture. Bake uncovered 30-35 minutes or until sweet potatoes are t3nder and pork is no longer pink in center.
