Pistachio Clouds with Fresh Fruit 1 Picture

Ingredients

  • 2 tbsp finely chopped natural pistachios
  • 2 tbsp confectioners' sugar
  • 2 large egg whites
  • 1/4 tsp cream of tartar
  • 1/4 cup granulated sugar
  • 1/2 cup raspberries
  • 1/4 cup clementine or seeded tangerine segments
  • 1 tsp chopped fresh mint leaves

Preparation

Step 1

Heat oven to 250 F. Line baking sheet with parchment. Toss nuts with confectioners' sugar in bowl. Set aside.

Beat egg whites with cream of tartar in bowl with electric mixer at high speed until soft peaks form, about 1 minute. Gradually add granulated sugar with mixer running and beat just until stiff peaks form, about 1 minute longer. Gently fold in nut mixture.

Drop mixture in 2 mounds, 5" apart, on prepared pan. With spoon, make 2 1/2"-diameter bowl in center of each mound. Use spatula to smooth edges to form approximately 5"-diameter rounds.

Bake in center of oven until dry and crisp on the outside, about 1 hour. Transfer parchment to rack and cool meringues completely. (Store in airtight container in cool, dry place until ready to serve.)

Mix raspberries, clementine, and mint in bowl. Place meringues on 2 serving plates and fill with fruit mixture. Garnish the meringues with confectioners' sugar, chopped pistachios, and small mint leaves. Serve immediately.
