MIX UP SANTA MARIA TANGY RUB AND APPLY TO ROAST, PLACE IN TUPPERWARE TYPE CONTAINER PLACE LID ON IT AND INTO FRIDGE OVERNIGHT, COOK AT 350 F TILL AN I.T. OF 160 F
OR SMOKE WITH NO MORE THEN 4 HOURS OF SMOKE USING YOUR FAVORITE WOOD AT 225 F TILL AN I.T. OF 160F
