Meyer Lemons are a little sweeter in flavor than a typical lemon, almost like a slightly tart orange.

Ingredients
- Crust
- 2 1/2 c almond flour
- 1/2 t salt
- 1/2 t baking soda
- 2 T pure maple syrup
- 1 t pure vanilla extract
- 1/2 c palm oil shortening, melted
- Filling
- 5 egg yolk
- 1/2 c granulated maple sugar
- 2 Meyer lemons, zest and juice
- 1/2 c grass-fed butter, melted
- 1/4 c berries for garnish

Step 1
Preheat oven to 325. Make the crust. Bake for 10-15 min or until golen. Remove from oven to cool.
In med sized bowl whisk the egg yolks and maple sugar together until smooth. Whisk in the lemon juice and most of the zest. (reserve the rest for a garnish). In a double boiler, heat the mixture, whisking constantly until thick.
Remove the filling from the heat. and whisk in the butter. Pour the filling into the center of the tart crust and bake for 15 min. (325)
Remove from oven and allow to cool. Garnish w/lemon zest and fresh berries. Refrigerate until serving.
