Ingredients

  • 3/4 cup unsweetened applesauce
  • 1 cup all-purpose flour
  • 2/3 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1 large egg
  • 2 large egg whites
  • 2 cups sugar
  • 1 teaspoon vanilla
  • 1/4 cup semisweet chocolate morsels

Step 1

Place a strainer over a deep bowl. Spoon applesauce into the strainer and set aside to drain for 15 minutes (you should have about 1/2 cup drained applesauce). discard the liquid in the bowl.

Preheat oven to 350 degrees. Coat a nonstick 11 x 7" baking dish with Pam. Set aside.

In a medium bowl, combine flour, cocoa, and salt. In a large bowl, beat egg and egg whites until frothy. Add sugar, drained applesauce and vanilla extract. Stir until sugar dissolves. Add flour mixture and chocolate morsels. Stir just until dry ingredients are moistened. Pour batter into the prepared baking dish and bake for 30 minutes. Cool in pan on a rack.
