Ingredients
- 1 C. brown sugar
- 1/3 C. vegetable oil
- 1/3 C. apple sauce
- 2 eggs
- 1 tsp. vanilla
- 1 1/2 C. all-purpose flour
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/4 tsp. salt
- 1/3 C. golden raisins
- 1 C. grated carrot
- 1 C. drained crushed pineapple

Preparation
Step 1
Butter muffin pan.
Stir together sugar, oil and applesauce.
STir in eggs until well combined.
Stir in vanilla.
In a separate bowl, combine flour, baking powder, baking soda and salt.
Stir into sugar mixture just until combined.
Stir in raisins, carrots, and pineapple just until combined.
Sppon into greased muffin tine, tilling to top.
Bake at 375 for 20 minutes or until done.
Cool in pan for 5-10 minutes, then move to rack for final cooling.
