mini pork, apple & pistachio sausage rolls

Ingredients
- 500 g free-range pork mince/ground pork
- 1 red onion, peeled and finely chopped
- 2 cloves garlic, peeled and minced
- 3/4 cup roughly chopped pistachio
- 1/2 cup chopped dried apricots, (opt'l)
- 2 Granny Smith apples, grated
- Handful parsley
- 1 teaspoon mustard powder
- 2 tableespoons wholegrain mustard
- 1 tbsp cider vinegar
- Dash Hot sauce
- 4 sheets puff pastry (I used CAREME brand)
- Salt and freshly ground pepper
- 2 egg yolks and 1 tablespoon milk for egg wash
- Handful poppy seeds

Preparation
Step 1
heat olive oil in a saucepan, add the onion and pinch of salt and saute until soft and translucent. add the garlic and continue to cook for another 5 min. Remove the pan from the heat and allow to cool.
Place the pork in a large bowl and add the nuts, apple mustard, vinegar parsley and apricots if using and the cooled onion mixture. Season with the salt and papper and herb and combine well using your hands
Cut a pastry sheet into three roughly 3 inch wide strips, then cut each strip into pieces at least 2 inch intervals, lay each piece of pastry on a worktop and place a teaspon of filling at one end. roll up to enclose the filling then seal with egg mixture, repeat until all the mixture is used up you should have about 90 rolls
coat each sausage roll generously with the remaining egg wash and sprinkle with poppy seeds
