Ingredients
- 1 medium head cauliflower, broken into florets
- 1 medium carrot, shredded
- 1/4 cup chopped celery
- 2-1/2 cups chicken broth
- 3 tablespoons oat flour
- 3/4 teaspoon salt
- 1/8 teaspoon pepper
- 2 cups almond milk
- 1/2 cup nutritional yeast (it gives the cheesy flavor)
- 2 tablespoons olive oil

Preparation
Step 1
In a large pot, combine the cauliflower, carrot, celery, water and bouillon. Bring to a boil. Reduce heat; cover and simmer for 12-15 minutes or until vegetables are tender (do not drain)
In another large saucepan, add olive oil. Stir in the oat flour, salt and pepper until smooth. Gradually add almond milk. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Reduce heat.
Add the oat flour mixture to the Large pot of veggies and then add the nutritional yeast. Stir well and cook on medium heat stirring often until it comes to a boil.
Add cooked chopped chicken to make a complete meal
