Seafood Penne with White Wine sauce

This dish is great to serve to a crowd. You can vary it by adding chicken strips or different veggies (asparagus,peas,etc.)

Ingredients

  • 1/4 cup olive oil
  • 4 oz. jar sundried tomatoes in oil, chopped
  • 4 garlic cloves, chopped
  • 1/4 lb. prosciutto, chopped
  • 1 med purple onion in chunks
  • 1 red pepper in chunks
  • 1 yellow pepper in chunks
  • 1 bag broccoli florets
  • 1 1/2 lbs shrimp peeled and deveined
  • 1 1/2 lbs scallops
  • 1-1 1/2 cups white wine
  • 4 oz. clam juice
  • 1/4 cup italiian seasoning
  • red pepper flakes, salt and pepper to taste
  • 1 lb box whole wheat penne

Preparation

Step 1

Saute first four ingredients over med/med high heat until fragrant(make sure to use oil from sun dried tomatoes too).

Add next three ingredients and continue to cook until just wilted.

Add broccoli and seasonings, cook for one minute.

Add shrimp, scallops and white wine.
Cook until shrimp turn pink(about 2 minutes)

Add clam juice.

Add to cooked penne and toss.

Sprinkle with chopped fresh basil and parmesan cheese. Serve and enjoy!
