SPINACH SALAD W/ BLUEBERRY VINAGRETTE

Ingredients
- VINAIGRETTE:
- 2 TBS blueberries
- 3 TBS blueberry preserves
- 3-4 TBS cider vinegar
- coarse salt and fresh ground black pepper
- SALAD:
- 6 cups baby spinach
- 1 cup blueberries
- 1/4 cup slivered shallots
- 1/2 cup crumbled goat cheese
- 1/4 cup slivered almonds, toasted
- 1 tsp dried thyme
- coarse salt and fresh ground black pepper

Preparation
Step 1
Vinaigrette:
1. In small bowl, mash blueberries w/ a fork. Add remaining ingredients; whisk to combine. Season w/ salt and pepper. Set aside.
Salad:
1. Combine spinach, blueberries and shallots in large bowl.
2. In a small bowl use fork to gently combine goat cheese, almonds and thyme. Sprinkle over salad. Season w/ salt and pepper. Drizzle w/ vinaigrette, gently toss and plate.
