  • 3-5 lbs. Beef roast
  • 1 jar pepperoncini peppers
  • 4-5 bottles (not light) beer...or enough to cover the beef.
  • 1-2 loaves of crusty french bread

Step 1

As soon as finish your dinner the night before, Put the beef, and peppers, with the juice, in the crock pot.

Cover it with the beer, and don't touch it till the morning.
Simmer it on low.

In the morning, don't touch unless it needs more liquid. Then add more beer to cover the meat.

At supper, you take out the roast and peppers for serving/ Since the beer acts as a tenderizer, it may be easier just to pour it all into a strainer to get rid of the liquid.

Make sandwiches with the beef on the crusty bread, and serve the peppers on the side. They will pop with the liquid inside.
