Ingredients

  • 3/4 cup all purpose gluten-free flour (bean flour blends and sorghum work best with this recipe, should work with most gf flour+starch blends)
  • 1/4 teaspoon xanthan gum
  • 1/4 teaspoon salt (optional, if you like salty crackers)
  • 1 1/2 cups cheddar (about 6-8 oz)**
  • 4 tablespoons cold butter, cut into 1 inch pieces
  • extra salt for sprinkling (optional)

Preheat your oven to 350ºF. Line a baking sheet with parchment paper; set aside.

In a food processor, pulse the gluten-free flour blend, xanthan gum and salt. Add the butter pieces and cheese. Pulse together until it forms a ball (about 2 minutes). If you don’t have a food processor, you can do it by hand. It may require a little extra work, kneading and/or get messy. But you can still blend the ingredients.

Place the ball between two pieces of wax paper, and roll it out to about 1/4″ to 1/8″ thick.

Using a pastry wheel or pizza cutter, cut into 1″ shapes/squares. Carefully peal them and place on a parchment lined baking sheet about 1/2″ apart. Poke each cracker with a fork to prevent over-puffing. Sprinkle with salt, if desired (I like the extra salt).
