Ingredients
- 6 Tbsp reduced calorie mayo
- 3 Tbs
- p cilantro
- 3 Tbsp water
- 1 medium scallion minced
- 1 1/2 Tbsp lime juice
- 2 tsp sugar
- 1/2 tsp chili powder
- 15 oz canned black beans drained
- 1 1/2 cup cooked corn kernels
- 2 cups grape tomatoes
- 1 medium sweet red pepper cut into thin strips
- 8 cups romaine lettuce

Step 1
To make dressing, whisk mayo, cilantro, water, scallion, lime juice, sugar and chili powder. Refrigerate until read to use.
Layer remaining ingredients in order listed. Cover and refrigerate. Can be stored 4 days in the frig.
To serve, spoon salad ingredients into bowl, shake dressing and drizzle over salad.
