Ingredients
- 4 portabella mushroom caps
- 1 Tbs. olive oil
- 1 tsp. salt
- 2 c. Cheddar cheese, shredded
- 1 Tbs. fresh chives, minced
- 1 small tomato, seeded & chopped
- 2 slices bacon, cooked & crumbled

Preparation
Step 1
Preheat oven to 450 degrees. Line a baking sheet with foil & spray lightly with cooking spray.
Brush mushroom caps & edges with olive oil. Sprinkle stem side with salt & place rounded side down, on baking sheet.
Divide cheese among mushroom caps & bake 10 min. or until cheese begins to melt & edges begin to brown. Remove from oven & sprinkle mushrooms with chives, tomato & bacon.
Return to oven & cook an additional 5 min. or until cheese is melted & mushrooms are hot. May cut in wedges & serve with toothpicks.
