Ingredients

  • 2 Tbs. butter
  • 1 4 lb. chicken
  • Salt & pepper
  • 1 tsp. poultry seasoning
  • 2 carrots, cut in chunks
  • Paprika
  • 8 slices bacon
  • 2 c. beef broth

Step 1

Preheat oven to 450 degrees.

Rub butter over entire chicken. Season with salt, pepper & thyme. Place carrots in cavity & tie legs together. Place chicken breast side up in roasting pan. Lay bacon strips across top & secure with toothpicks. Sprinkle with paprika. Pour beef broth into pan, DO NOT pour over chicken.

Roast for 15 min., then reduce heat to 350 degrees. Baste with broth. Continue to roast 1 hr. & 15 min.or until internal temp. is 180 degrees. Baste every 15 min. with broth.

Remove bacon. Roast chicken for 15 min. longer to brown skin. Bacon may be eaten, but discard carrots.
