Easy Coconut Pie - #

Very good pie. One store bought pie will not hold this recipe. This makes a 10 inch pie.

Ingredients
- 2 cups sweetened flaked coconut
- 2 cups milk
- 1 cup sugar
- 3 jumbo eggs
- 1 large egg
- 1 tbsp. coconut extract
- 1/4 cup butter, melted

Step 1
Preheat oven to 350 degrees
Precook pie crust a bit to make sure bottom is not soggy.
Sprinkle the 2 cups coconut in bottom of pie crust.
In the container of a blender, combine milk, sugar, eggs and coconut extract. Blend until smooth. Add butter. Blend for 1 minute. Immediately pour mixture over coconut in prepared pie plate.
Bake on bottom rack until set, 50 to 60 minutes. If the top begins to brown too much, place a tent-shape piece of foil on top of pie. Let pie cool on a cooling rack. Serve at room temperature to cold.
