Ingredients
- 4 c. chopped rhubarb
- 1 c. flour
- 3/4 c. old-fashioned oats
- 1 tsp. cinnamon
- 1 c. brown sugar
- 1/2 c. melted butter
- 1 c. sugar
- 1 c. water
- 3 Tb. cornstarch
- 1 tsp. vanilla extract

Step 1
Preheat oven to 350 degrees. In mixing bowl, combine flour, oatmeal, cinnamon, brown sugar & melted butter. Mix well. Press half of mixture into a greased 8x8 baking pan. In saucepan, combine sugar, water, cornstarch & vanilla. Cook over medium heat until very thick & transparent, stirring frequently, about 4-6 min. Add the rhubarb, stir & spread over crust. Sprinkle with remaining oatmeal mixture over top. Bake for 1 hour.
